§ 79. The lighter a liquid is, the deeper a constant weight
will sink. 167.

Thus, for ascertaining the quality of some liquids some
special Hydrometers are in use: One is the Alcoholometer (the
more alcohol brandy contains, the stronger it is and the deeper
the Alcoholometer sinks). 168. 344.

Another one is the Lactometer used for testing the quality
of milk. The deeper the Alcoholometer sinks in brandy, the
more water it contains and so much the weaker it is; the higher
the Lactometer floats in milk, the better the milk is. But the latter
is no infallible test, as the natural quality of milk changes and
the particular strength of milk may be obtained by an admix
ture of other substances.
